      Two Sauces for the Gravlax Sandwich

Select one of the sauces below for the salmon sandwich. Both sauces are similar in taste.

“Gravlaxsås” - Swedish mustard dill sauce 1

3 tablespoons mustard (mixture of 2 parts sweet honey mustard and 1 part Dijon preferable)
1-2 tablespoons sugar
1 dash of salt
2 tablespoons vinegar
½ cup olive oil
½ cup or more chopped fresh dill

  1. Mix mustard, sugar, and vinegar.
  2. Add the olive oil drop by drop while whisking. The mixture shall turn shiny and thick.
  3. Add the dill.
  4. Add the salt and sugar according to taste.

Hovmästarsås - Swedish mustard dill sauce 2

3 tablespoons mustard (mixture of 2 parts sweet honey mustard and 1 part Dijon preferable)
1 tablespoon sugar
1 dash of salt
1 dash of coarsely grounded white peppercorns
1 tablespoon vinegar
1 egg yolk
½ cup olive oil
½ cup or more shopped fresh dill

  1. Mix mustard, sugar, vinegar, and egg yolk.
  2. Add the dill.
  3. Add the salt and sugar according to taste.

The mustard dill sauce like “Gravlaxsås” and “Hovmästarsås” can usually be found in Scandinavian stores. Be aware, however that, the best before date format in Swedish is “Bast fore” day-month-year or year-month-day.
